1 bag Grateful Snacking Co™ granola (7 oz)
1/4 cup granular monk fruit
1/2 teaspoon salt
3 Tablespoons butter, softened
8 oz cream cheese, softened
5 Tablespoons butter, softened
1 cup powdered monk fruit
Juice and zest from 2 large limes (reserve 2 T for topping)
1 cup heavy whipping cream
1/4 cup powdered monk fruit
For crust- pulse granola in food processor until ground. Add other ingredients and press into 9 x 9 pan covered with parchment. Bake at 300 degrees for 12 minutes. Cool crust completely.
For filling- with electric mixer mix all ingredients, spread in cooled crust.
For topping- whip cream and powdered monk fruit until formed peaks. Spread on top of filling and sprinkle remaining zest on top. Refrigerate for several hours until firm.
