Grateful Snacking Co.™ Granola Bites & Chia Pudding Breakfast Bowl

Serves 2

 

¼ cup unsweetened almond milk

¾ cup full-fat coconut milk

¼ teaspoon vanilla extract

1-2 drops liquid stevia

2 tablespoons chia seeds

1 tablespoon hemp protein powder (optional)

Handful of blue berries and raspberries

3-4 crumbled Grateful Snacking Co.™ Granola Bites of your choice

 

In a medium bowl, whisk together the almond milk, coconut milk, vanilla and stevia. Add the chia seeds and hemp protein powder: whisk to combine. Refrigerate for 20 minutes, whisking occasionally to distribute the chia seeds and allowing mixture to thicken.

 

Divide the pudding between two bowls. Top with berries and crumbled Grateful Snacking Co.™ Granola Bites.

 

Tip: Double the pudding recipe and store in refrigerator up to one week. Top with berries and crumbled bites when serving.
